Mediterranean Spinach

What You’ll Need
- 1 tablespoon coconut oil
- 1/2 small onion, sliced very thin
- 6 pitted black olives, diced
- 2lbs fresh baby spinach, washed & stemmed
- 1/2 teaspoon fresh lemon juice
- sea salt
- pepper
The How To
- Heat a large pan with a lid over medium high heat
- Add oil and sliced onions, then saute until onion starts to wilt
- Add spinach and black olives
- Saute 2 minutes
- Add lemon juice, salt and pepper
- Cook one more minute to enhance flavor
- Serve
