Mediterranean Spinach

What You’ll Need

  • 1 tablespoon coconut oil
  • 1/2 small onion, sliced very thin
  • 6 pitted black olives, diced
  • 2lbs fresh baby spinach, washed & stemmed
  • 1/2 teaspoon fresh lemon juice
  • sea salt
  • pepper

The How To

  1. Heat a large pan with a lid over medium high heat
  2. Add oil and sliced onions, then saute until onion starts to wilt
  3. Add spinach and black olives
  4. Saute 2 minutes
  5. Add lemon juice, salt and pepper
  6. Cook one more minute to enhance flavor
  7. Serve
